For the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Drink (produces 850ml, serving 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, as a garnish
Mandarin essential oil, as a final touch

Method

To prepare the Citrus Syrup: Combine every items into a pan, bring to a light boil, stirring until the sugar dissolves. Next, remove from the heat and leave to cool down fully. Decant into a clean bottle, cap it keeping it chilled, where it will keep for around four weeks.

For the Cocktail Base: Pour the specified liquids in a large bottle, leave to sit for an hour, then filter it best through muslin, to ensure it's perfectly clear.

To serve: Measure 85ml from the premix into a cocktail shaker filled with ice, and agitate carefully for a minute to cool it down. Pour to a cold coupe glass or similar, garnish with some cranberries adding the final touch with a light spray with the mandarin essence over the drink.
